Our dough is a 67% hydrated 24 hour wild yeasted Biga pre-ferment mixed and balled into 265gram balls and refrigerated for a further 48 hours.
But that’s not the real reason we are called 67Sourdough. If you want to know the real reason ask Cam and he will bore you senseless with the reasons why. Expect answers to do with angel numbers and the universe. You’ve been warned.
